Today I am going to describe how to cook brinjal mashed. In Bengali we say it “Begun vorta”. It is very popular vegetable in our country. In Bangladesh, brinjal is used in a wide variety of dishes, both everyday and for special occasions due to it’s versatile nature. Some examples of these foods are curry, fried fish with brinjal, achaar, brinjal fry and so on. However brinjal vorta and curry is most popular dishes.
There have some various process to make it. I try to make it in different ways but here I would describe the best one which is really very testy. In my countryside people mostly like to prepared begun vorta by this process. This is so testy. Actually I passed my childhood in my village. I really enjoyed my nostalgic memory and I liked those food which was made at mud oven. I remember those day, my mother with our uncle-in-law cooked together at mud oven. We always watched their cooking and their had a lot of gossiping, fun . I really missed those days. Sometimes we were insist to take food on the cooking spot due to it’s attractive smell.
Now I am going to describe the main part of my articles.
Rounded Brinjal : 1 pcs(big size)
Onion : 1 Pcs (chopped onion)
Mustard Oil : 1 tsp
Dry Chili : 1 or 2 (as per test)
Salt : as test
At first take some oil with hand and massage on brinjal body. Now the most charming part, burn the brinjal. You can think that how do you burn it. Normally I did it on my gas oven with medium heat. I just put it on my gas oven and after burn one side I just turn over it. On this way I burn whole brinjal. You also can follow my process. If anybody live village or who have mud oven this process is going to be more easier one. After cooking the mud oven is remain hot for 1 or 2 hour. You just put brinjal on mud oven and cover it with hot coal.
Now put off the burned brinjal and depart the outer burn skin of brinjal with the help of some water. Take a dry clean pot and keep on it. Now, fry the dry chili by taking some oil.
Here you reached the finishing part . Now mashed the fried dry chili with salt and then add with onions. Here have a technique, this mashed process need to do very well and do that with your hand and take 1 minute or more. Then mixed mustard oil on it and here also mixed very well by taking time.
Finally just add burn potato with them and mixed all item properly. It just takes a couple of minute. It easy process but very tasty one.

Some people prepared this by frying it. However I want to say that by frying brinjal it takes a little more oil. This is not good for health and I assure you that burning process is best one amd very testy. It has extra smell it comes from burning the brinjal. This is really goes extra credit to make begun vorta by burning it.
